Our Approach
Al taglio means "by the cut." It is the way pizza is eaten in Rome: baked in large rectangular trays, sold in squares by weight, and eaten standing at the counter or sitting with friends. The dough is lighter than Neapolitan, with a crisp base and an open, bubbly crumb. We ferment ours for 72 hours, bake it in steel trays, and top it with whatever is good at the market that morning.
Delisio opened on Rokeby Road in 2015. We are a small team, we make everything in house, and we are fanatical about the quality of our flour, our tomatoes, and our mozzarella. Subiaco has changed a lot since then, but our approach has not: good dough, good produce, no shortcuts.
